Mochi Fest

Whenever our relatives come visit from Maui, they bring mochi and manju from Homemade Bakery. Al-la-la it is so delicious. WELL, Jordan is visiting and neglected to bring it! So, on a slow Saturday morning I got the idea of trying to copy our favorite bakery with these weird delicacies. I have made various mochi lots, but never filled with red bean paste - this was my goal for today.

The internet is an awesome place - I had ideas, but could not find how to do them anywhere. After reading many blogs, and tried making the soft mochi with red bean paste inside. However, I didn't want to do it the long-suffering old-fashioned way. SO, I did them in a mini muffin pan. This is how it looked right out of pan...
After dusting with potato starch....NEXT, I added a few eggs to batter, and placed them in a regular size muffin pan. These are Joseph's favorite, although he does not understand why in the world I would put food coloring in them.
Since I was on a roll, I thought, Hmm...I wonder what the difference between manju and mochi is - manju is wheat flour and mochi sweet rice flour. I did it! They actually look pretty close to Homemade Bakery too. We DID determine that the Canola oil I used had too much flavor in it - causing the manju to "taste like my mom's fried Talapia" ( which we figured out was the oil taste)
Last but not least I tried the pan kind, layering the red bean paste in it - which was very difficult to spread on warm layers. I have to improve on this one somehow. It is VERY delicious, but tough to handle. This is before the dusting - post-dusting they are beautiful but too soft.
I may have to do it the old fashioned way, but who ever has a whole day for this kind of thing?

Dances With Wolves/Singing With Whales

I cannot help but think how beautiful it is that Jordan sings with whales...I mean, WITH whales - IN the water with them. Super cool.

Dejavu

A friend of mine went through a divorce 3 years ago. Thankfully, they had no children. They parted ways because he had an affair, left her for another woman, and told her his new woman is way better than she is.

For the last 3 years, her ex has repeatedly attacked her, threatened her, told her how great his life is without her, etc.

At times, he wanted to meet with her over coffee, just to talk. He always told her that he is sorry for hurting her, but that he is a stronger person for it. He kept repeating to her some mumble jumbo that he would do it all over again. (My friend did not feel any need to meet for coffee.) THIS struck a chord with me for sure - if he says he wouldn't change the way his life went, wouldn't change a thing: then she needs to stay far away from him.

The fighting over property has been mild, yet constant. As recent as 3 months ago, he threatened to call the police on her for something that he lost in his moving around.

WELL, this week she got a wedding invitation from him! Really?

We had a long talk. Bottom line is that she is happy he has found a new family - but it will be without her in his life. She is free from wanting him back - he left her, and now that he is getting married my friend feels a certain freedom. She is more fully released from having to deal with him...in good or bad. This is a finality for her to move on and be healed.

Boundaries are OK and are healthy. Sometimes you have to move on in life without people who were a part of your life, however big or small.

There is such thing as Necessary Endings.

Super eery how I can relate to her story....NOT with my husband though. He has always been faithful.

God bless her. She has a brand new start in life and she is going to be great.

This Cannot Be!

Our last of five children, my tom boy - Julianne Grace, (the short asian-ish-looking one) is becoming a beautiful young lady! (OK OK she IS sticking her tongue out - I see that). Daddy Joseph is not handling it well - AT ALL. She had a party (high school!) to go to - the theme was to wear black and white. Daddy was HORRIFIED when she did not wear her BLACK AND WHITE BASKETBALL JERSEY!!! I mean, really, REALLY, she HAD a perfect black and white to wear!

But no, she got this adorable black and white outfit out. Oh man oh man...we are not ready for this. Brother Jaron and his "friend" Andrea said "SHE LOOKS LIKE KIM KARDASHIAN!" THIS put Daddy Joseph OVER the edge again - he exclaimed "I don't know WHY she didn't just wear her cool black and white jersey!!!!!"

I must say - at 15, she has the SWEETEST heart and most precious love and gratitude for life. Almighty, most sovereign God, please keep her close to your heart.

Yup

New family activity on the horizon. We have a trip planned when Jordan will be home from Maui. We need to rub his face in some snow to remind him of his roots.

Paleo Diet

Julianne and her friend, who does Crossfit, were going to do the Paleo Diet, which is also nicknamed the Cave Man Diet. It is an eating challenge to eat as the cave men ate.

They were excited to do this for the health benefits, since they both workout a lot.

They started Monday.

Monday - they caved in.

Tuesday - they caved in.

Julianne ate Panda Express and Kaley are Taco Time. Julianne said "Hey! There were Asian cave men too!"

I renamed it "Man you Caved" diet.

Moved to Tears at the Piano

This song, along with beautiful, loving voices raising praise to God moved me to tears as I played piano this first day of 2012.

Words by Horatius Bonar, 1842. Bonar wrote these words while superintendent of the Sunday school at the Church of St. James, Leith. It was one of the first hymns he wrote, and the only one he composed specifically for his Sunday school students. It was sung for the first time on New Year’s Day, 1843. Bonar published it in his Songs for the Wilderness the following year.
A few more years shall roll,
A few more seasons come,
And we shall be with those that rest
Asleep within the tomb;
Then, O my Lord, prepare
My soul for that great day.

Refrain

O wash me in Thy precious blood,
And take my sins away.

A few more suns shall set
O’er these dark hills of time,
And we shall be where suns are not
A far serener clime:
Then, O my Lord, prepare
My soul for that blest day.

Refrain

A few more storms shall beat
On this wild rocky shore,
And we shall be where tempests cease,
And surges swell no more;
Then, O my Lord, prepare
My soul for that calm day.

Refrain

A few more struggles here,
A few more partings o’er,
A few more toils, a few more tears,
And we shall weep no more:
Then, O my Lord, prepare
My soul for that bright day.

Refrain

A few more Sabbaths here
Shall cheer us on our way,
And we shall reach the endless rest,
Th’eternal Sabbath day;
Then, O my Lord, prepare
My soul for that sweet day.

Refrain

’Tis but a little while,
And He shall come again
Who died that we might live, who lives
That we with Him may reign;
Then, O my Lord, prepare
My soul for that glad day.

Refrain

Another Attempt at the Tree

This time the appetizer tree worked even better - hubs cut the cucumber shapes, even hearts. He kept going to our tree to look at the ornaments, and tried to copy shapes. He did a great job on the star for the tree top.The bottom of the tree had packages of cucumber boxes and kumquats.
Gathering at Dolly's house - minus Anderhoff's who are in California for Christmas, Jordan who is in Maui, and Jason who was Christmas shopping on Christmas Eve. I love my family and am so thankful for each and every one of them. Glad that Dolly's cousins Andrea and Abby could join us too.

Edges and Crumbs

Bar NONE - my favorite thing at Christmas time baking session is the apron my three boys made for me when they were little. I treasure it and it makes everything well in the world.
I have a rule when cooking - burned or dry edges and crumbs must be eaten, and they have no calories. I am now stuffed.

This was my first try at Tri-Colored Mochi. I love how they turned out, and how I can get 2 colors by turning upside down. Makes my mind race on how I can have fun with these. For those of you who don't know what mochi is - it is an acquired taste for sure. They are basically made of mochiko flour (sweet rice flour), sugar, coconut milk, water and vanilla, and are super gooey, so must be rolled in potato starch. I think they must do that to Aplets and Cotlets too. Mochi can truly freak people out on their first try. -
Lemon Bars - cannot leave them out - we all need our fruit.
I have been making this recipe for Peanut Brittle since 1973 - it is the not-break-the-teeth-kind.

At the risk of leaving out good protein, these are peanut butter balls made in a pan. I call them Lazy Balls

Edible Christmas Tree

This turned out so cute! It was eaten all gone at our Quantivate Christmas party. So thankful for all that God has given me this year.

WHAT a year it has been! It started out with anaphylactic shock and near death from celery, and ended with me busting myself up real bad in my mom's hospital room. LOL I couldn't even MAKE this stuff up!

In spite of the beginning and end of 2011, I am so blessed.

Funny Christmas card story:

I ordered the Costco Christmas cards - after I clicked ORDER, I realized the picture was from LAST year, which I did not send out. Oh well, we all look basically the same.

As I started to think about addressing the 100 cards, I asked Joseph if we can just make labels - "we don't have labels or the program, just do it by hand like you always do". I thought about it for about 5 minutes, and realized that since I work 60 hours a week and he does not, HE should do it. I turned the job over to him to execute the next day.

After many failed attempts of trying to print in our printer, etc..etc..HE HAD LABELS MADE! Not only did he have labels made, he had an assembly line to putting labels on, sealing envelopes, and adding the stamps.

Gotta love him <3

How Could This Happen? REALLY?

My plane was 45 minutes EARLY landing in Phoenix. HOW can this possible happen???

My dear friend Willy died, and his memorial service was set for yesterday at 1pm. Since I was on total hip precautions I could not go to be with Trish and the girls. I was dying.

Wednesday I went to doctor, and he said I had a few more days of the hip precautions - I begged, and said "what is a few days?" (the hip precautions mean I could not sit at 90 degrees, bend over, lift my leg, etc. etc) When he agreed to lifting them on Wednesday at noon, day before thanksgiving, I thought to myself "Hmmmm....I wonder if I can arrange a flight for Friday's service?"

I had to go to physical therapy after the doctor...they killed me - this is going to be a process for rehab. I went home and got online - found the only flight that would work for Friday - after a layover in San Fran, it would put me in Phoenix 45 minutes too late - but I was willing to do it - I would be able to show up at the memorial at least.

I decided to surprise Trish (with the help of her girls). The plane was to land in Phoenix, then I get the car, and drive 30 minutes to the church.

Imagine how astounded I was when the pilot announced "Folks, we had a great wind, and will be landing 45 minutes ahead of schedule".....REALLY??? HAVE YOU EVER EVER HAD THAT HAPPEN???? PTL!!! I wanted to jump up and cry - but I couldn't jump, so I sat in my seat and quietly wept tears of gratitude. PTL.....truly.

I got to the service only after one song! I was THERE - I sat right behind Trish - she didn't know I was there. Then when they passed the mic around, I finally asked for it, and I said "Hi Trish" and she nearly had a heart attack. Priceless.

There was a sweet gathering at their house after, where they lighted 2 big fireworks that Willy was saving for his birthday. It was illegal - but if the police came, we would blame Willy.

I love these girls, who now will move ahead without Willy. Please keep them in your prayers, especially Trish - she has been with Willy since she was 16 years old - never been alone! This will be a new game for her.

There is a plan to go to Maui to sprinkle Willy off of his beloved Maui. I will start looking for places to stay for them.

God is good -

Willy - We WILL Ship Some Fellows Again One Day

My sweet friend Bill is in liver failure. His wife and three daughters are loving on him in his last few days on earth. Sleep will not come to me tonight, as I wait with my phone by my head, and this family in my heart.

They were our best friends in Maui. When we met them, they had just become Christians after years of drug abuse. What a wonderful journey we had together, having our first babies and growing in the Lord through Bible study with our sweet British pastor Blomerley.

Joseph and Bill worked together, and Bill is an amazing guitarist and musician.

Last April Trish called to tell me that Bill (whom I affectionately call Willy) just found out he has hepatitis C, liver cancer, and a myriad of other horrible illnesses. The Hep C festered unknowingly for many years.

As I lay awake praying for my friends, this verse clearly came to me, and is my comfort for them during this time:

God promises: "For I am confident of this very thing, that He who began a good work in you will perfect it until the day of Christ Jesus."

This perfection of God's good work looks differently with each of His children, but we can rest assured that it is true.

Blessed comfort to my sweet friends.

We always called "fellowship" - "shipping fellows" - I will forever smile at that and cannot wait to one day, ship fellows with Willy again.

Walking - Piece O' Cake

Not really - went to out patient physical therapy today.

New hip joint not THAT much longer than my other leg - it may be do-able without much trouble. We shall see....

I walk goofy - not putting my core strength on my left hip - got some great exercises.

Electrical currents on my scar to help wake up my nerves. Why did they have to do such a huge incision without doing lyposuction? (I thought of something! I have an ultrasound machine at home from my foot surgery! YES! He said use it! It will help the lumpy, yucky scars I have.

Amazing how little work can produce such aches - I will never use the word PAIN again, after experiencing the real pain that I did in this accident. Pain? Let me tell you what pain is! Wow - I shudder.

When I see shiny tiles I cringe.

Baby steps. I asked about walking a half marathon in April - it takes ONE YEAR for all the tissues to heal. Hmmm....doctor appointment with "ball bearing specialist" next Wednesday - will tell all.

Until then, day by day. I am not a day by day kind of person - at all. I am learning, trying to embrace this time that makes no sense to all of me. I feel like I am in the middle and twirling in a giant quastion mark.

God is good. I have great family, great friends. I love learning - there is a lot to study all the time. Culturally, things certainly shift around.

Eternity is real - and the most important aspect of this life. To live is Christ, and to die is gain. Yes - what a comfort this is.

I have 3 close friends who are looking into passing into eternity - I pray for them and their families. Joe Spencer, Bill Carroll, and Siri Shapiro's mom - God bless you and your families as you await this. How blessed the peace and hope in Jesus you have.

CHRISTMAS Trees, for Pete's Sake!!

Apparently the White House referred to Christmas Trees as “Holiday Trees” for the first time this year which prompted CBS presenter, Ben Stein, to present this piece which I would like to share with you. I think it applies just as much to many countries as it does to America . . .

The following was written by Ben Stein and recited by him on CBS Sunday Morning Commentary.

My confession:

I am a Jew, and every single one of my ancestors was Jewish. And it does not bother me even a little bit when people call those beautiful lit up, bejewelled trees, Christmas trees. I don't feel threatened. I don't feel discriminated against. That's what they are, Christmas trees.

It doesn't bother me a bit when people say, “Merry Christmas” to me. I don't think they are slighting me or getting ready to put me in a ghetto. In fact, I kind of like it. It shows that we are all brothers and sisters celebrating this happy time of year. It doesn't bother me at all that there is a manger scene on display at a key intersection near my beach house in Malibu. If people want a crib, it's just as fine with me as is the Menorah a few hundred yards away.

I don't like getting pushed around for being a Jew, and I don't think Christians like getting pushed around for being Christians. I think people who believe in God are sick and tired of getting pushed around, period. I have no idea where the concept came from, that America is an explicitly atheist country. I can't find it in the Constitution and I don't like it being shoved down my throat.

Or maybe I can put it another way: where did the idea come from that we should worship celebrities and we aren't allowed to worship God? I guess that's a sign that I'm getting old, too. But there are a lot of us who are wondering where these celebrities came from and where the America we knew went to.

In light of the many jokes we send to one another for a laugh, this is a little different: This is not intended to be a joke; it's not funny, it's intended to get you thinking.

Billy Graham's daughter was interviewed on the Early Show and Jane Clayson asked her: “How could God let something like this happen?” (regarding Hurricane Katrina). Anne Graham gave an extremely profound and insightful response. She said: “I believe God is deeply saddened by this, just as we are, but for years we've been telling God to get out of our schools, to get out of our government and to get out of our lives. And being the gentleman He is, I believe He has calmly backed out. How can we expect God to give us His blessing and His protection if we demand He leave us alone?”

In light of recent events... terrorists attack, school shootings, etc. I think it started when Madeleine Murray O'Hare (she was murdered, her body found a few years ago) complained she didn't want prayer in our schools, and we said OK. Then someone said you better not read the Bible in school. The Bible says thou shalt not kill, thou shalt not steal, and love your neighbour as yourself. And we said OK.

Then Dr. Benjamin Spock said we shouldn't spank our children when they misbehave, because their little personalities would be warped and we might damage their self-esteem (Dr. Spock's son committed suicide). We said an expert should know what he's talking about. And we said okay.

Now we're asking ourselves why our children have no conscience, why they don't know right from wrong, and why it doesn't bother them to kill strangers, their classmates, and themselves.

Probably, if we think about it long and hard enough, we can figure it out. I think it has a great deal to do with 'WE REAP WHAT WE SOW.'

Funny how simple it is for people to trash God and then wonder why the world's going to hell. Funny how we believe what the newspapers say, but question what the Bible says. Funny how you can send 'jokes' through e-mail and they spread like wildfire, but when you start sending messages regarding the Lord, people think twice about sharing. Funny how lewd, crude, vulgar and obscene articles pass freely through cyberspace, but public discussion of God is suppressed in the school and workplace.

Are you laughing yet?

Funny how when you forward this message, you will not send it to many on your address list because you're not sure what they believe, or what they will think of you for sending it.

Funny how we can be more worried about what other people think of us than what God thinks of us.

Pass it on if you think it has merit.

If not, then just discard it.... no one will know you did. But if you discard this thought process, don't sit back and complain about what bad shape the world is in.

My Best Regards, Honestly and respectfully,

Ben Stein
